Join me as I walk you through the steps for preparing the
delicious Gobhi Gosht (Cauliflower with Mutton) a dish in this video. Your
taste senses will get pampered by the combination of delicate mutton and
cauliflower florets cooked in flavorful spices. Make this flavorful meal with
my simple step-by-step directions, and you'll be asking for more. Let's start
our culinary journey!
Ingredients:
500 grammes of small-pieced mutton
a medium-sized cauliflower that has been sliced into
florets.
2 finely chopped onions
2 pureed tomatoes
two teaspoons of ginger• garlic paste
2 slit green chilies
1 teaspoon of turmeric powder
A single tablespoon of red chilli powder
Garam masala powder, 1 teaspoon
one teaspoon of cumin seeds
a single tablespoon of coriander powder
Yoghurt, 1/4 cup
oil, 4 tablespoons
Chopped fresh coriander leaves (for garnish)
Salt, as desired
Instructions:
1. In a big pan or pressure cooker, heat the oil. Add the
cumin seeds and let them puff up.
2. Brown the finely chopped onions in hot oil.
3. Include sliced green chilies and ginger-garlic paste.
Sauté for a few seconds to get rid of the raw scent.
4. Add sections of mutton to the pan and cook them.
until they are evenly browned on each side over medium heat.
5. After adding the tomato puree, wait a few minutes before
checking to see whether the oil is starting to separate.
6. Add salt, red chilli powder, coriander powder, and
turmeric powder. Mix well to spread the flavorful spices over the meat evenly.
7. Lower the heat to a low setting, cover the pan or
pressure cooker, and simmer for about 30 minutes (or, in the case of a pressure
cooker, until the mutton is tender).
Additional Advice:
If using a pressure cooker, you may add a
little amount of water (approximately 1/4 cup) to generate some steam, which
will aid in tenderising the mutton faster.
8. In the meanwhile, boil the cauliflower florets for 3 to 4
minutes. By taking this precaution, you may keep your food's brilliant colour
and avoid overcooking. Remove and set
aside.
9. When the mutton has finished cooking, add the blanched
cauliflower florets and stir everything together gently.
10. Mixture should be combined with yoghurt and garam masala
powder. Stir well to evenly distribute the delicious flavours over the meat and
cauliflower.
Extra Hint:
Dry toasting the garam masala powder in a
skillet for a minute before adding it to the meal can improve the flavour.
11. Cook the cauliflower until it's soft but still firm by
covering the skillet once more and cooking it for an additional 10-15 minutes.
Extra Hint:
You may remove your cover for the final few
moments of cooking to let some of the liquid escape if you want a richer gravy.
