  • 4 cups basmati rice
  • 2 onions
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 2 bay leaves
  • 4 green cardamoms
  • 4 cloves
  • 2 cinnamon sticks
  • Salt to taste

Instructions:

  1. Start by cleaning the chicken thoroughly. In a bowl, marinate the chicken with turmeric powder, red chili powder, cumin powder, coriander powder, ginger paste, and garlic paste. Allow the chicken to marinate for at least an hour.
  2. While the chicken is marinating, wash the basmati rice under running water to remove any impurities. Soak the rice in water for about 30 minutes.

  3. Peel the potatoes and cut them into halves or quarters. Fry the potatoes until they turn golden brown. Set them aside.
  4. Heat oil in a large pan and add bay leaves, green cardamoms, cloves, and cinnamon sticks. Fry them for a few seconds until they release their aromas.
  5. Add the sliced onions to the pan and cook until they become golden brown.
  6. Add the marinated chicken to the pan and cook until it is thoroughly cooked.

  7. Once the chicken is cooked, add the fried potatoes to the pan and mix well.
  8. Drain the soaked rice and add it to the pan, gently mixing it with the chicken and potatoes.
  9. Add enough water to cover the rice completely.

  10. Cover the pan with a lid and cook on low heat until the rice is fully cooked.

Serve the flavorful Kolkata Chicken Biryani hot and enjoy the delightful blend of spices and textures. This authentic Bengali biryani will surely impress your loved ones.
